Fro-Yo Vanilla Cream Bites

🌰 1/2 cup peanut butter
🥛 1/4 cup plant based milk
🌱 1/2 cup soft dates or prunes (pits removed)
🔴 1/4 cup dried cranberries
🌰 2 Tbsp flaxseeds
🌰 1/3 cup puffed quinoa
🌰 1/4 cup chopped walnuts
🍦 1 cup unsweetened soy or coconut yogurt
💪 1 tbsp smoov vanilla cream
🍫1/2 cup dark chocolate (roughly chopped)
🍓 Handful of fresh berries
1. In a food processor combine the peanut butter, plant based milk, dates, flaxseeds until a soft dough forms.
2. Transfer the mixture to a large bowl and add the puffed quinoa, chopped walnuts and cranberries.
3. Gently mix until combined.Melt the dark chocolate (using water bath method).
4. Arrange mini cupcake liners in a mini muffin pan.
5. Place a teaspoon or two of the mixture in the bottom of each prepared cupcake liner.
6. Top each with a spoonful of melted dark chocolate and pop to the freezer for couple of minutes.
7. In the meantime mix yogurt and Vanilla Cream all in one blend.
8. Remove the muffin tin from the freezer and cover each of the bites with a spoonful of the yogurt filling.
9. Pop a piece of fruit on top of the yogurt layer for a garnish.
10. Place the frozen yogurt bites in the freezer to set for at least 1.5 hours before serving.
